WHAT ARE THE FOOD ALLERGIES?

Food allergies are the responses of certain organisms to an strange element (called an allergen) which may be harmless to any other person.

Our body creates defences against viruses and bacteria. In the case of allergic people, these substances are targeted against the allergens. The encounter of these two elements leads to the allergic reaction.

This contact can take place in the air we breathe, in the skin or during the digestive process.

Any kind of food, ingredient or additive can lead to an allergic reaction. The most common are : cow milk, egg proteins, fish, anisakis, legumes, fruits and vegetables, nuts, additives, seafood and cereals.
