INGREDIENTS (for a 3 or 4 people pizza):

  • 250 g/2 cups HARIMSA TYPE 00 STRONG WHEAT FLOUR.
  • 135 cc/1/2 cup cold water (from the refrigerator).
  • ½ teaspoon salt.
  • 1 tablespoon olive oil.
  • 50 g/1/4 cup all purpose flour.
  • 50 g/1/4 cup durum wheat semolina.
  • You do not have to add yeast. We have already included it in the flour.

PREPARATION METHOD

1.- Mix the flour and the salt.

2.- Place this mixture in a bowl (or in a kneading machine, if it is available). 

3.- Add the cold water and the olive oil. Start kneading.

Kneading methods and times
BY HAND: around 15/20 minutes
WITH A KNEADING MACHINE:  15 minutes.
WITH THE THERMOMIX: 6 minutes choosing the “ear speed” function.
USING THE DOUGH KNEADING PROGRAMME OF THE BAKING MACHINE: 15 minutes.

  • Once we have obtained a fine and elastic dough, shape it as a ball and leave it to stand for 24 hours in a covered bowl inside the refrigerator.

  • Then, sprinkle the table, the rolling pin and your hands with the mixture of flour and durum wheat semolina. Dip the dough in batter to avoid stickiness. Place it on a slightly greased oven tray. 

  • The mixture of flour and semolina will help the dough from becoming sticky.

  • Preheat the oven to 240º C.

  • Cover the dough with your favourite ingredients (tomato, mozzarella, vegetables, ham, etc...) and put it in the oven when the indicated temperature has been reached. Bake around 7/8 minutes.


OUR ADVICE

  • The dough temperature at the end of the kneading process should not be higher than 24/25º C.

  • By rolling the dough in the mixture of flour and semolina your pizza will be crustier.
